In a medium saucepan, pan-fry the chorizo sausages for a couple of minutes or until browning. Set aside into a small bowl. In the hot pan over medium heat, fry the garlic and red chilli in olive oil and then add the Maison Therese Tomato Relish and simmer for 2 minutes. Add the cherry tomatoes and blister for a couple of minutes then add the wine or stock and let simmer until reduced. Meanwhile prepare the mussels and add once the sauce has reduced. Warm the mussels and serve with toasted garlic sourdough, rocket salad and a glass of wine. Enjoy.
